The first of the four major ingredients in your beer will be malt. Malt
provides the fermentable material for your beer and also contributes flavor
and color to the finished beer. Your base malt will typically be malted
barley, but may also be malted wheat, or other malted grains like rye.
Malt can be bought in its natural grain form, and if you do so, it will
be up to you to convert the starches in the grain into fermentable sugars
during a process called mashing. A much easier way is to buy malt extracts,
where the conversion has already been done for you. Malt extracts are
available in syrups, also called Liquid Malt Extract (LME), and in spray-dried
powders, also called Dry Malt Extract (DME). Our selections include high
quality malts from a number of countries around the globe. The brands
that we carry have consistently proven to be of superior quality and present
a good value to the consumer.
Some cans of LME already have hops added and come with a package of dried
yeast under the cap. These are commonly called "kits" and are
the simplest way to make beer. Kits need more fermentables (malt, brewers
sugar, honey, etc.) to produce a full five gallon batch of beer. You can
use plain liquid or dry malt extracts to add to your hopped kits as a
"booster." One 3.3 lb. can of plain extract added to a 4 lb.
kit should produce a starting gravity of 1.050 or about 5% alcohol. You
can also use plain extract to build your own brew from scratch by adding
your own bittering, flavoring and finishing hops.

Briess
(USA) Dry Malt Extract
Briess DME is the spray-dried version of their LME. You
will, however, get about 10% more yield per pound because there is no
water weight. Many of our customers will use one three pound bag of
DME along with a 3.3 or 4.0 lb can of hopped liquid malt extract (kit),
which will give a richer, maltier taste and better body than corn sugar.

Grains
Malted grain is the basis
for the liquid and dry extracts that many people use in the brewing
process. The grains that we offer at Old West have numerous uses from
flavoring to colors, to acting as your base fermentable material.
The products below are divided into steeping or mashing grains.
Steeping grains are typically used to add flavor and color to base
malts or mashing grains. For extract brewers, they can be steeped in
your boil pot and require no special equipment. Even the most simple
extract brew can be improved with the use of steeping grains. For all-grain
brewers, they are added to the base mashing grains during the mash.
Mashing grains are used to produce fermentable sugars, and for all-grain
brewers, take the place of malt extracts. An all grain mash is an advanced
brewing technique. Mashing requires additional process steps to convert
the starches in the grain to sugars. Special equipment is also required.

| Crystal (Caramel) Malt |
Crystal malts leave a sweet, caramel taste to your brews.
Use between .75 and 1.5 lbs per 5gal batch. The higher the Lovibond
rating or L number the more color the crystal will contribute to your
beer. To use, crack grains, steep in a grain bag at 155 deg
for 30 minutes. Remove grain from pot and proceed as per basic
beer brewing instructions. Crystal can be added to most every
batch you make. Most of the recipes that you see will make
use of this great tasting grain. We have Crystal from America, Germany,
Belgium and the UK. Each has its own special flavor and we would suggest
that you try several to learn the differences. |
